Processing Contaminants in Edible Oils: MCPD and Glycidyl Esters

This book discusses the current research on monochloropropanediol (MCPD) and glycidyl esters in edible oils. These potentially harmful contaminants are formed during the industrial processing of food oils during deodorization.
